In Andalusia, where I live, it's always been this hot in summer, no drama here.
Maybe visit Spain in May or September ? Fewer visitors, cooler, more pleasant weather. You can sit outside in the day without spending the night following in the local hospital. If you like to stay a week in temperatures usually found an industrial bakery or iron foundry then by all means go in August. The North coast of Teneriffe in September is perfect in my books with a few clouds coming over the mountain.
From my perspective the summer months were always too hot along the Mediterranean. Best time was always the period a month either side of and including Easter - Semana Santa always being a particularly good time. With climate change I definitely wouldn’t touch southern Spain after the end of May. I was in Basque country in early June and even in Northern Spain there were abnormal days that were hitting 30 degrees (too hot for me). That said, can’t escape 30 degrees in the UK anymore! We are just going to have to get used to it.

Coastal Portugal looks inviting on the heat map. I remember Sintra being a lot cooler than Lisbon, but that was in October and November in 2024. Even now, though, Evora is cooler than North East Texas, where I am now.
44 is the hottest I've experienced in Granada 2 years ago. Admittedly I went in July but I just drank lots of cold water. Loved it.
I'm here at the southern slopes of the Sierra Nevada, about 960 m above sea level. Today temps reached 39 degrees, with night temps not dropping below 25 degs.
