For me ,the biggest thing missing here, I think, is Chokotoff which is a very famous chocolate candy also from Côte d'Or, and it's one of my favourites. And for the Sirop de Liège, I use it more as a great condiment to give a little sweet touch.. for example, I love it on a baguette sandwich with Brie-cheese (heavy on the cheese for me), very thinly spread sirop, crumbled walnuts and very thin slices of a somewhat sourish apple. But if you're just going to spread it on toast, which is great too, use less, spread it as you would spread vegimite, otherwise the flavour is to strong and to sweet :D
The speculoos has nothing to do with Christmas. It is a "Sinterklaas" which is a children's fest celebrated on December 6th in most parts of Belgium. In the Aalst region, it is "Sint-Maarten", which is on November 11th.
The speculoos are not chrismas themed. That's Saint Nicolas. He gives presents to children on 6 december. We also have Christmas (Noël) and Santa (père Noël). Fun point Saint Nicolas (Sinter Klaas in dutch) became Santa Claus in US and came back to Europe so we have double dose of gifts. The Liege waffles are better if you blast them for a minute in the microwave. They get super soft and less dry. Grills flavor is fumé/ gerookt that litterally means smoked. So yes, smoky flavor. Liège syrup is indeed concentrated apple and pears juice. The meatballs sauce is usually made frome this syrup, beer and some herbs. Praliné and pralines are different things. Praliné is the rich nutty filling you had in the Côte d'Or. Pralines are the chocolate delicacies. It's more a question of size than a real recipe. Any single bite, around 3cm chocolate with some filling is a praline. There are a LOT of tourist crap (often still better than what they know). Côte d'Or is a good supermarket chocolate brand. For pralines, the basic is Leonidas. A fancier brand is Neuhaus. The rest is hit and miss.

There is also a law in belgium that chocolate has to have 35% pure cocoa to be authentic
Another fun fact. The dessert 58 was created for the world fair in brussels in 1958. It was so popular, and still is, that it still exists today.
16.34 ! There's a big difference between praliné and praline. Praliné is a creamy paste of caramelized nuts, used to fill chocolate bars and pralines. And praline is a chocolate bonbon that can be filled with just about anything.
