You are confusing ‘soufflé’ with ‘zuurvlees’. 😉 The dish you had is generally a stew of beef that has been tenderized in vinegar (sour = zuur in Dutch) and apple syrup. Very comforting dish, especially during the colder seasons. 😊

The rice pie is similar to a Southern Italian pie that is specially made for Easter. The presence of rice and sugar in a sweet recipe like this indicates that it is a really old recipe from when rice and sugar were expensive and imported at great expense from the Middle East.
The mustard soup with bacon bits I thought would be a winner
I got the old amsterdam kaas bitterballen (cheese balls) in my freezer for a snack tonight😂
As a Limburger myself I am so happy to see someone visiting The Netherlands and choosing not to visit the tourist traps :D
